Siglo says hello to the new Sergio's, Melbourne
From the team behind Kafeneion, Angel Music Bar, Siglo and Le Pub, Sergio’s is set to bring a late-night edge to Collins Street. Opening alongside Roma, the new bar and record store draws inspiration from Italian filmmaker Sergio Leone, with Roman-style interiors and a curated vinyl offering from Hub 301’s Greg Molinaro.

A Moody New Bar Beneath the Old Stock Exchange: Prive, Melbourne
From the team behind Reine and La Rue, Prive brings a new layer of glamour to Melbourne’s former stock exchange. Set within the historic Safe Deposit Building, the venue will feature an intimate private dining room and Bar Prive, a moody 24-seat cocktail bar serving classic drinks, French-leaning snacks and small plates.

Fishnets Brings Japanese Dining to Bronte
From the team behind Table Manners, Fishnets is Bronte’s new Japanese-inspired neighbourhood restaurant. Led by chef Sanghyeop Kim, formerly of Sokyo, the menu spans nigiri, yakitori, seafood, wagyu and playful desserts, alongside sake, Japanese whisky and signature cocktails. With moody interiors and a dedicated cocktail bar, it brings a darker, more polished edge to Macpherson Street.
